Iranian Producer Replaces Yeast with Sourdough to Improve Quality of Bread

TEHRAN (ANA)- A participant in Asreh Omid Event of the Islamic Azad University said he has used sourdough instead of yeast to improve the quality of bread.

“Instead of yeast we used sourdough which dates back to 2,500 years ago and leads to the production of very high-quality bread which is rich with nutrients and medicinal effects,” Nasser Zamand who represented the Islamic Azad University, Sabzevar branch, told ANA.

He made the remarks on the sidelines of the Islamic Azad University's "second step of revolution" under the title of Asreh Omid Event which was held in Tehran's Mosalla from May 29 to June 01, 2022.

The event aimed to exhibit new achievements and products in the technological and innovation arenas in line with opening new windows towards strengthening the idea of creating ground for knowledge-based businesses at the 40th anniversary of the establishment of the Islamic Azad University.

Some 3,000 knowledge-based companies, laboratories, research centers, and startups took part in Asreh Omid Event.

Zamand went on to say that yeast is used instead of baking powder which contains bicarbonate of soda in confectionery, adding, “Benefiting from advanced technologies and equipment, we produce confectionery and bread using yeast."

Both traditional and industrial bakeries use yeast because they want to expedite the production of bread. So, a lot of phytic acids which is very harmful to the body remains in the wheat flour, while the production of bread using sourdough lasts almost two days and is much better in terms of quality, he explained.

Zamand pointed out that creating jobs both directly and indirectly increases with rising the amount of production. Meanwhile, end costs may be different considering the quantity and quality of raw materials.

In the current [Iranian calendar] year (March 2022-March 2023), new approaches have been taken to support knowledge-based companies both in terms of quality and quantity in line with realizing the goal of a knowledge-based economy, Iran National Innovation Fund director Ali Vahdat has said.

So far, over 7,000 knowledge-based and 1,600 creative companies have been registered and started operations across the country.
